Is standard cold storage procedure overly complicated?

Noob here.

The whole procedure (moving unsigned transaction to offline PC, signing it, and moving it back) seems overly complicated. Can't I just move the entire wallet file to an offline PC when I want to keep it safe, then move it back when I want to move money? If an attacker had access to my online PC, wouldn't having access to the signed transaction (when I move it over from the offline PC) be just as vulnerable as having access to the whole wallet?
What am I missing?

Cold storage that NEVER needs the internet?

Hello, I'm new to crypto and this sub. Thanks in advance for your help!
So I'm figuring out cold storage and learning about Raspberry Pi, and I've found a few descriptions about how to set up a Raspberry Pi cold storage wallet. This one seems pretty good, but it requires a Pi model B so an Ethernet cable can be connected for the wallet installation. I'm wondering if there's a wallet/setup configuration that would allow me to install from USB without ever connecting the Pi to the internet, for setup/maintenance/operation or anything else. Can a model A become a cold storage wallet or is this not currently possible?
